When I was editing this photo I realized it kind of looks like a monster. But this dish wasn’t scary, it was rather good. And low in carbs, if you are into that kind of thing.

I used lean ground beef and added fat free mozzarella, but I think those are the only changes I made to the recipe. My only advice is to cut the eggplant thin, otherwise it kind of makes me gag a little bit.
