I added ground turkey in with the onions. Our guests were raving about this, it was delicious! I think it’s something about toasting the eggplant slices and spritzing them with lemon juice. Yummy!

And Brandy doesn’t have a photo, but she sent in her recipe for the Stuffed French Toast she made for breakfast in bed!

Stuffed French Toast with Sliced Stawberries

A pint or two of fresh strawberries
2-3 TBS of fine granulated sugar.

Slice strawberries into quarters, coat with sugar and refrigerate overnight.

8 thin slices of rustic Italian bread.
1/4 cup cream cheese
2 eggs
1/3 cup half and half.
2 tsp. sugar
1/4 tsp cinnamon
1 tsp vanilla

Spread cream cheese on flour slices of bread. Top with remaining slices.

Combine eggs, half and half, sugar, cinnamon and vanilla in a bowl big enough to dip in bread. Whisk until well combined.

Melt a little butter in your skillet (medium heat). Dip bread into egg mixture, coating both side. Cook each side until golden brown.

Top with strawberries. It should have a nice light syrup due to the sugar! Enjoy!

I love food challenge the most because it always makes me want to get into the kitchen and start baking!
