Corn Muffins

As mentioned before, I make breakfast for That Husband every morning, banana bread. Sometimes I get tired of making the same thing (and doesn’t husband get tired of eating the same thing?) so I tried to branch out by making these savory corn muffins with corn, cheddar, and green onions.

I thought they were delicious and hearty, warmed in the microwave for just a moment with some margarine on top. That Husband wasn’t impressed though, so it’s back to the banana bread for awhile.

  1. My husband has a weird obsession with bananas and banana bread. I like it okay and if I make it I always want a good two slices then I want nothing to do with it. Which was a bit of a problem before since I usually made two loaves.

    Corn bread is his domain though. I’m used to the sweeter ones, and he has a good balance of sugar and savory to it. Mmm corn bread, perfect with chili.

    Sounds yummy! My hubby to be rarely eats breakfast and when he does, it is something ridiculous like low-fat yogurt!

  3. What about oatmeal muffins? Then you could mix it up by adding different things (blueberries, chocolate chips, etc) and it would be a little bit of a change, but the same basic recipe? Although even with banana, you could add some chocolate chips, some pecans, some coconut, peanut butter - it might be more interesting if you got to experiment a little?

  5. These muffins look really good and I love savory things in the morning!! Sean loves banana bread too, we make a blueberry sour cream bread too that is really good, but I am not sure what the calorie count is-but we sub with vegan sour cream. I think it’s on William Sonoma online.

  6. Aw, you’re such a good wife! Does TH cook at all? My bf doesn’t have a clue in the kitchen and my skills aren’t that great either so I feel like I’m going to have to learn how to cook sooner or later.

    No, he can’t cook at all. It is awful! When he does cook something, like eggs, he asks me questions about every single step. “Which pan should I use?” “Should I use this spatula thing?” “How many eggs?” “You put milk?” “How much milk?” “What if I put in more than three tablespoons of milk, will that ruin it?” “How much cheese?” “How do I put the ham in?” “How high should the burner be?”

    And then he never does his dishes.

    So you can see why I just do it all myself :)

    Hey, that’s how my husband cooks! Although it starts out with “Do we have any eggs? I can’t find the eggs. Are you sure we have eggs? *I get up, find the eggs* Oh, I didn’t look there. Ok, where is the salt?”
