Conference Weekend Treats

Conference weekend is a time when life feels like it moves at a slower pace, and between sessions is the perfect time to practice my culinary skills. Saturday and Sunday morning we had flax seed pancakes with strawberry puree and whipped cream. No recipe for the pancakes as they were a mix from Whole Foods (thanks mom!) with extra flax seeded in. Strawberry puree was made with blended frozen strawberries and agave nectar. Whipped cream was made with heavy whipping cream, vanilla, and agave nectar.

I also made a batch of Rachel Ray’s Black Bottom Cupcakes. These have been on my must-make list for awhile now and they did not disappoint, especially since I added extra cocoa to the batter and used dark chocolate chips instead of semi-sweet. They were like little chocolate cheesecake bombs and I know I’ll be making them again.

    Those pancakes look delicious :)
    Oh, and for the cupcakes we usually add a little batter after the cream cheese, so its like a little surprise in the middle..so yummy!

    Tip:
    Try is as a cake sometime! Make chocolate cake and put drops of the cream cheese mix in the cake mix …once you have poured it into the dish. And then top with chocolate frosting after it’s baked.
    Yummy!
    My mom made black bottom cupcakes for me growing up and the cake version has become a birthday tradition.

    Yum! I love your pancake topping idea. I still prefer maple syrup to agave nectar, but maybe the agave is better in this recipe since it is subtler and doesn’t overwhelm the strawberries?

    agave nectar rules. not that you drink coffee, but i think it’s fantastic in coffee (in addition to it’s uses in baking).

    Is this the Real Food diet you alluded too? It’s all food, it looks really, really good… this diet is sounding better and better. I’d never though of combining cream cheese with choc. cupcakes.
